The Secret to Every Soup

My grandmother knows how to cook up the most delicious soups and always has a warm pot that is ready to be eaten. She makes up her own recipes and can do this because of her secret to every soup basis: butter, onions and a vegetable like carrots or potatoes.. That's all there's to it (and of course stock cubes to flavour the soup). So how does my grandma always manage to conjure such an amazing soup with her secret basis ingredients? I’ll use the recipe for one of my favourite soups to explain: Carrot soup.
The ingredients include:

1 large onion, roughly chopped

¼ a stick of butter ( a good chunk)

500 g of carrots, peeled and chopped

100 ml of pure orange juice
-
500 ml of vegetable stock
-
Salt and pepper to taste
-
Cream to add at the end (optional)
Where to go from here:

Heat the butter in a large saucepan and let it melt

Add the onion and carrots and fry gently on low heat for 5 minutes until soft

Add the orange juice and vegetable stock, stir and simmer for 30 minutes

Remove from the heat and allow to cool a little

Leave to cool slightly, then puree the soup with a soup blender until the soup is smooth

Add salt and pepper to your own taste :)

When you serve the soup add a dot of cream (optional)
If carrot soup is not your cup of tea (huh?), here’s another recipe you can try: Courgette soup.
What you need:

2 white onions, roughly chopped.
-
½ a stick of butter (a good chunk)
-
3 potatoes, peeled and chopped
-
3 large courgettes, quartered and roughly chopped.
-
3 large garlic cloves, crushed
-
1 litre of vegetable stock (bouillon)
-
Salt and pepper to taste
Method:

Heat the butter in a large saucepan and let it melt

Add the onion and carrots and fry gently on a low heat for 5 minutes until soft

Add the garlic and courgette and cook for another 5 minutes

Stir the ingredients together
-
Add the stock
-
Stir the ingredients together and then cover the pan
-
Simmer for 10 minutes until everything is tender
-
Leave to cool slightly, then puree the soup with a soup blender until the soup is smooth
